Hey y’all! This pasta sauce is something I tried years ago when my daughter was a toddler. I’m unsure why I stopped doing it, but now she’s eight and a picky eater. We also have two boys, ages 3 & 5, who can be picky.
I whipped this up in a fair amount of time with what I had on hand. It came out great! The older kids enjoyed it. My daughter even asked to have it in her lunch the next day. My three year old has a very limited palate and wouldn’t go near it LOL!
Keep in mind, this ain’t your average food blog. I won’t always have exact measurements, and I season from the soul.
- Saute zucchini, onions, peppers and carrots. Fresh or frozen will do. Don’t forget to season!
- Once tender, add to blender with 1/2 to 1 jar of pasta sauce.
- Blend until smooth.
- Add to pot and let simmer. Use a liquid of your choice to thin if needed (broth, water, pasta water).
- Don’t forget to taste as you go and season more if needed.
- Meanwhile, boil pasta in salted water. Drain when cooked to your preferred tenderness. Lightly drizzle with olive oil and season before adding to the sauce. This will build flavor.
- When you like the taste and consistency, serve it up!
